Ingredients
- 1.5 packages graham crackers (a box typically has three packages)
- 1/2 stick butter (4 Tbsp.)
- 1 Tbsp. sugar
- 3 eggs
- 1/2 cup maple syrup
- 1 package cream cheese (8 ounces)
- 1 cup cottage cheese
- 3-4 lemons, or enough to make 1 Tbsp. zest and 1/3 cup juice
- 1 tsp. vanilla
- 1/4 cup flour
Directions
Crust
- Preheat oven to 325 degrees Fahrenheit
- Melt butter
- Crush graham crackers (using a food processor, a rolling pin and ziplock bag, or whatever other method reduces them to crumbs)
- Combine crushed graham crackers, melted butter, and sugar (if using food processor, add the butter and sugar after the crackers are crushed and blend further; if not, a mixing bowl and spoon works fine)
- Press crust mixture into a cheesecake pan
- Bake crust for 10 minutes
Filling
- Zest lemons (amount can be approximate)
- Cut zested lemons in half and squeeze to produce juice
- In food processor or blender, combine cream cheese, cottage cheese, eggs, syrup, lemon juice, lemon zest, vanilla, and flour
- Blend until reasonably smooth
- Pour filling into crust
- Bake for at least 45 minutes
- Let cool
- Eat
